Our Beginnings

Foo Bakery had its humble beginnings as a home bakery at 21 Martaban Road, producing delicious tarts for relatives and close friends especially during the Chinese new year period.

This tradition was passed down through 3 generations over a period of 50 years in the making.

Starting as a semi professional home bakery in 2010, this home baking idea slowly evolved and later developed into a small batch bakery.

Our Team

It first started with housewife Jessie Choy who refined the recipe using caramelised pineapple jam along with her immaculate pastry and baking techniques which made tarts that would just melt in your mouth.

Jessie was assisted by Grandma Foo who provided her baking skills to refine the texture of tarts of which you are enjoying today. Stemming from Peranakan influences Jessie and Grandma Foo introduced and used a variety of spices which made the pineapple jam so uniquely flavourful.

Our Process

Hours were spent on preparing the jam the traditional way - from selecting the best quality pineapples, de-skinning pineapples and removing its core, picking the 'eyes' of the pineapples, manually grating, cooking and stirring pineapple jam over a charcoal flame to then preparing the tart dough rolled by hand into mini tartlets.

The caramelised spiced jam had to be painstakingly done by hand, placed individually onto each tart measured and made to size, and finally into the oven for baking to a golden yellow colour. It would be an entire family affair where grandma, uncles, aunties, parents and siblings would be roped in to produce a number of containers of pineapple jam tarts to sell to the Salvation army church goers at the Balestier Corp right opposite.

The Foo bakery pineapple jam tarts are one of the best jam tarts you could possibly buy in Singapore which are still traditionally hand made.

Foo bakery is now led by head bakery chef maestro Patrick Foo and co-run by his son Jamie Foo.

The best ingredients are sourced on your behalf and baked to perfection.
